We all love strawberries for sweetness and aroma that only seems to scream "summer", but have great nutritional value too. Strawberries are a rich source of vitamin C and other antioxidants which we all know are important for good health. Antioxidants are scavengers that help the body fight free radicals.
While some people may prefer other berries, in Southern California, you can walk to almost any neighborhood and
see avocado trees growing in the course of the neighbors!
Avocados provide your body with olive oil similar to healthy fats you need, and can increase levels of HDL or good cholesterol. They also happen to be a great source of potent anti-inflammatory nutrients, including carotenoids.
Here is an easy Strawberry Avocado Salad Recipe, hope you will become one of your best salad recipes too!
You'll
need to grab a couple staples from your pantry first. I like really
simple dressings to as not to distract from the fruits and vegetables.
For the dressing you'll need:1 tablespoons cider vinegar.
1 teaspoon lemon juice.
2 tablespoons white sugar.
2 tablespoons olive oil.
3-4 teaspoons honey.
Mix or whisk these together and set aside. As
all my healthy recipes I like to make it as simple as possible, so mix up dressings in a tiny 1 cup Ziploc or Tupperware bowl. Then I just pop the
lid on and shake together. If you have any leftover is easy to store
and saves on doing extra dishes.
For the salad:Grab about 2 cups of mixed greens.
1 avocado, peeled, pitted and sliced into cubes.
About 10 fresh strawberries sliced.
½ Almonds or raw nut of your choice.
Combine the salad ingredients in a bowl and cover with sauce Crumble some feta cheese on top is very good too. This recipe makes about 2 servings. It also holds up well if made in advance as the lemon
juice in the dressing keeps the avocados from turning brown.
