Recipe for Cheesy Potato Soup:
Ingredients :
  • Water
  • 10 medium red potatoes
  • 1/2 package chopped bacon pieces
  • 1 diced green bell pepper
  • 1 large finely chopped onion
  • 2 minced garlic cloves
  • 1 teaspoon celery seed
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/3 package cubed Velveeta cheese
  • 1 cup milk
Instructions :
*Rinse, drain and then peel, slice chop and cut meat and vegetables into smaller bite sized pieces for easier handling and cooking. Set aside separately until needed.
*Add enough water to cover the potatoes and diced red potatoes in a large pot . Add a pinch or two of salt. Bring to boil. Cover and cook until potatoes are tender.
*In a large pot or a separate skillet over medium heat, add bacon bits, diced green pepper, chopped onion and garlic. Stir constantly while cooking until onions are translucent. Saute until the green pepper and a piece of bacon are tender.
*Drain off bacon drippings with the exception of about 1 teaspoon. Stir in the celery seed, salt and pepper. Saute for 1 to 2 minutes. Add this mixture to the pot of boiling potatoes and stir.
*Reduce the heat to medium. Add the cubed Velveeta cheese and stir to help melt the cheese. Slowly add the milk, stir continually while heating the soup through until hot.
*Potato soup is only as good as making a beef stew recipe when you want something good to eat.
