Vegetable Soup with Pasta
    
     We all know these evenings when there's not much time to cook and you need something quick. Or just do not feel like cooking, for example, in a Friday night or Saturday. And if you've had a full meal for lunch and dinner must certainly be something light. But you still want the pleasant taste, fill up and be healthy, right?
     Instead of a sandwich, why not make a soup for a change? You can with almost everything you have at home. All vegetables can go. It is also the ideal way to get rid of leftovers : carrot, this bone, this piece of broccoli or cauliflower. Just pull it all together for a soup and a good meal.
Here is a very simple recipe that you can use to create an unlimited number of different soups :
Healthy Dinner Recipes # 1 : Vegetable Soup with Pasta :
Ingredients :
  •    700 ml chicken, beef or vegetable stock.
  • 350 g vegetables (one kind or mixed).
  • 150 g soup noodles.
  • spices of your choice.
Steps:
  • Boil water and prepare actions.
  • Meanwhile, prepare the vegetables: Wash, peel, remove pips and seeds and cut into little cubes or florets or thin slices.
  • Add vegetables and noodles to the boiling stock. Reduce the heat, cover partially and allow simmering for 10-15 minutes until vegetables and noodles are just soft.
  • Season and serve. 
  • Serve 4 peoples.
Variations and Tips:
  1. If you are in a hurry, you can safe a lot of time by using frozen or canned vegetables which are ready for use.
  2. You can use vegetables only or combine them with legumes. Dried peas, beans and lentils take quite some time to cook, so you might want to use canned ones instead.
  3. You can add a little meat or sausages too. Simply reduce the amount vegetables a bit then. To keep it healthy, make sure that at least 2/3 of your 350 g are vegetables or legumes.
     No fat is added in cooking, and do not use foods high in fat. That is why it is very healthy and fit this type of soup, even for people who want to lose weight. If you need to strictly control your carbohydrate intake, I recommend that you use whole wheat pasta instead of white. If you can not get the whole wheat noodle soup, never mind. Broken spaghetti will also do the trick.
      Especially in winter, there is nothing better than a nice hot dinner soup. Soups are great for dinners, as many of them are easy to prepare and you can use almost anything in the fridge and pantry. If your kitchen is well organized, so you 'll always have something to make a good healthy soup. 
     But sometimes you want something special. Cream soups are great. But they are rich in fat and a bit heavy. Is this really healthy ? Well, from time to time will not hurt you. But if you 're worried about calories, try the following :
Healthy Dinner Recipes # 2 : Creamy Vegetable Soup with Whole Grain Rolls :
Ingredients :
  • 1 tbsp. olive or canola oil.
  • 1 small onion, chopped.
  • 2 garlic cloves, crushed.
  • 350 g vegetables (one kind or mixed).
  • 700 ml chicken, beef or vegetable stock.
  • 100 ml low fat milk.
  • spices of your choice.
Steps:
  • Heat the oil in a large pot and fry onion and garlic until golden.
  • Then add the vegetables and roast briefly. Add the stock and allow simmering for about 10-15 minutes until the vegetables are soft
  • Puree the soup with a stick blender, mix 100 ml of low fat milk and season.
  • Serve with whole grain rolls or toast. 
  • Serve 4 Peoples.
     This healthy dinner recipe has much less fat than original cream soup. Used vegetable oil is healthy oil you can get, and the cream is replaced by low-fat milk. It gives the soup a creamy texture without the load of calories. Even whole milk would make a big difference and cream.
     In addition to reducing calories from fat, the recipe also ensures that you will not have too many calories from carbohydrates. It uses whole grains instead of refined white bread, meaning complex instead of simple carbohydrates. These are great for diabetics and overweight people because they don't cause heavy blood sugar fluctuations and are very unlikely to be stored as fat. Also,
they fill you much quicker and for longer than the refined versions, preventing overeating and sudden hunger attacks whilst giving you lasting energy.
